Wondering what to cook tonight? Look no further than a warming and nutritious Thai inspired stir fry. You’ve got it all going on in here, red peppers, ? carrots, water chestnuts, cavalo Nero (that’s a type of kale which is full of Vitamins A, C and K not to mention fibre and great for brain ? function), some Thai red curry paste, coconut milk, rice noodles, chicken (although you could easily leave this out) and topped with some cashews. Very simple to make and very tasty. This dish is packed full of fibre, loads of vitamins and antioxidants along with a good portion of protein. Add a couple of tbsps of red Thai curry paste in a pan and warm until becomes fragrant, add a couple of tbsp of coconut milk and the chicken at this point if using chicken. Cook for 5 minutes and then add a tsp of ground ginger, a tbsp of fish sauce and a tbsp of maple syrup. Now add any vegetables that you are using, starting off with those that will take longer to cook, (for this dish that was the carrots and peppers). Add the rest of the tin of coconut milk, the rest of the veg and simmer until chicken and vegetables are nearly cooked. You could serve this with rice or rice noodles as I have done. Buy these either fresh or ones that you rehydrate in a bowl of boiling water and then add to the dish.
