Easy Stir Fry

You can buy a bag of stir fry veg from most shops or choose and chop your own veg. I like to add red onions, carrots, broccoli, red pepper and mangetout, but to honest, sometimes it just depends what I’ve got in the fridge. If you are eating fish or poultry, add some prawns or chicken as well.

Heat some oil in a pan on a high heat, I like to use sesame oil. If you are using chicken add the chicken first and then after a couple of minutes add your vegetables. Add your vegetable and cooked for a few minutes until cooked through, but so they still have a bite. If you are adding prawns add them now.

I am slightly obsessed by this sauce – mix all of the ingredients below in a jar and add to your wok once you’ve cooked the chicken if using or the vegetables

2 tbsp peanut butter, 1 tbsp tamari (wheat free soy sauce), 1 tbsp maple syrup, 1 tbsp apple cider vinegar, 1-2 cloves of finely chopped garlic, Juice of 1 lime, 1 tbsp sesame oil

1/4 tspn of ground ginger or use fresh

You could add some brown rice or some noodles (wheat free or any other noodles you fancy) there are loads of varieties, they usually need immersing in hot water for a few minutes then add to the wok and stir into the sauce
