Not all meals score highly on the nutrition front, but this little beauty certainly does! It tastes good and is full of protein, zinc, iron, Vitamin C, fibre, calcium, the list goes on.
Chop 1 courgette finely along with 2 carrots and a fennel bulb, add a teaspoon of olive oil plus half a chopped garlic clove and heat over a medium heat for 10-15 mins. Add half a teaspoon of ground cumin, a sprinkle of cayenne pepper, a couple of handfuls of spinach, the zest of 1 lemon, a good handful of frozen edamame beans, 3 chopped sun dried tomatoes and stir. Add 200g of cooked prawns and warm through. In a jar add a tbsp of toasted sesame oil, 1 tbsp of tahini, half a tbsp of maple syrup, tsp of turmeric and shake well. Pour over and sprinkle on some toasted pine nuts and enjoy!
